Carrot Cake Cookies – Gluten Free and Vegan

If you’re a fan of carrot cake like I am, these carrot cake cookies are going to satisfy your taste buds like no other! – Guaranteed!

Imagine eating a cake in cookie form – guilt-free…THIS IS IT! 

These cookies are:

  • Gluten-free
  • Sugar-free
  • Dairy-free
  • Vegan, and
  • Paleo

They are extremely healthy, nutritious, chewy and delicious! 

No added sugar, no added fats, no refined flours and no nasties. Just pure and simple everyday ingredients that can be found in your pantry.

Easily transportable (or put in a lunchbox) and can be eaten at breakfast, lunchtime or even as a snack, a bit like these oat cookies and chocolatey granolie bites.

Servings: 8

Prep time: 5 mins

Cook time: 20-25 mins


1 medium sized carrot (peeled and cut in half in circles)

1 very ripe banana

5 dates (pitted)

1 cup whole oats (not quick oats)

1/2 cup pecans or walnuts (toasted is best but not mandatory)

1/4 tsp nutmeg powder

1/2 tsp ginger powder

1/4 tsp cinnamon powder

Pinch of cardamom powder

1 tbsp water

1/4 cup raisins (I prefer to roughly chop mine but that’s optional)


1. Preheat the oven to 190C (375F) and line a baking tray with parchment paper.

2. Blend the carrot and dates in a food processor until it’s chopped into small pieces.

3. Add all the other ingredients in the food processor (except the raisins) and pulse 6 times (avoid over-processing otherwise you’ll end up with a paste-y texture).

4. Transfer the mixture into a bowl and stir in the raisins.

5. Using an ice-cream scoop, place 1 spoon of the mixture onto the lined baking tray. (I prefer to spoon the mixture on to my hand to roll and flatten them per the step below.)

5. Flatten each ball into a cookie shape (approx 1/4inch thick). 

6. Cook at 190C (middle tray in the oven) for approx 20 mins or until the edges of the cookies are golden and crisp to touch.

7. Transfer the cookies to a cooling rack.

8. Devour your freshly baked goods! – Best enjoyed on the day!
